2015 Hatchback comes with 16inch standard. Can I put 17inch wheels on? Mess up the speedometer? Fit. Looking to put Toyo Open County AT3 tires on.

You can get tires that will be close to the same circumference as the tires with the 16’s but if you want at3 your speedometer will definitely will be off

Your speedometer may be so slightly off you may not notice but ultimately depends on the outside diameter of the tire you choose on your 17's.
I went from 19 down to 17 and it was a -0.35 mph difference with the tire I use. That means that the GPS registered 60mph and the Mazda registers 59 mph roughly taking in account the position when looking at the speedometer .

I'm running Mazda 6 17" wheels on my 2014 hatch. No issues. Just use online wheel/tire calculator to get the closest circumference match to original setup.
